Coffee and Walnut Cake Recipe

Ingredients:

For the Cake:

  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 4 large eggs
  • 2 cups (250g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 cup (120ml) strong brewed coffee, cooled (our Persia - Brazil coffee is perfect for this)
  • 1 cup (100g) chopped walnuts

For the Coffee Buttercream:

  • 1 cup (225g) unsalted butter, softened
  • 2 cups (250g) confectioners' sugar (powdered sugar)
  • 2 tablespoons strong brewed coffee, cooled
  • 1 teaspoon vanilla extract

For Garnish:

  • Chopped walnuts

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 350°F (180°C). Grease and line two 8-inch (20cm) round cake pans with parchment paper.
  2. Prepare the Cake:

    • In a large bowl, cream together the softened butter and sugar until light and fluffy.
    • Add the eggs one at a time, beating well after each addition.
    • In a separate bowl, whisk together the flour and baking powder.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    • Fold in the brewed coffee and chopped walnuts until evenly distributed.
  3. Bake:

    • Divide the batter evenly between the prepared cake pans.
    • Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
    • Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  4. Prepare the Coffee Buttercream:

    • In a mixing bowl, beat the softened butter until creamy.
    • Gradually add the confectioners' sugar, beating well after each addition.
    • Mix in the brewed coffee and vanilla extract until smooth and fluffy.
  5. Assemble the Cake:

    • Once the cakes are completely cooled, spread a layer of coffee buttercream on top of one cake layer.
    • Place the second cake layer on top and frost the top and sides of the entire cake with the remaining buttercream.
  6. Garnish:

    • Sprinkle chopped walnuts on top for decoration.
  7. Serve:
